Cooking with Jazz: Grateful Granola


Grateful Granola

As most of you know, our sacred and beloved studio was so very close to burning down. I was actually on my way to the studio when I received the call not to come in, as the building next store was ablaze! I immediately went into panic mode, but I was also more concerned with making sure everyone was safe. Deep down inside, something told me it was all going to be okay. Thankfully our studio was saved thanks to the amazing fire fighters, and only one person was injured and is recovering well. 

I am so grateful to all the students that practice at our studio, our wonderful teachers and staff that put so much effort into cleaning, clearing, and cleansing the space, and the wonderful community we have all created together at Namaste. I will never take for granted the studios special energy, and the opportunity to be apart of it's thoughtful community. 

My 'Grateful Granola' is a wonderful recipe that is full of crunchy cinnamon and maple clusters. It's perfect to snack on it's own, or throw on top of smoothie bowls, yogurt, or chia pudding. I'm looking forward to sharing this at our next community Breakfast on the Patio. 

Grateful Granola Recipe 
  • 1 cup oats
  • 1/2 cup almonds
  • 1/2 cup coconut shavings
  • 1/4 cup pepitas / pumpkin seeds
  • 1/4 cup flax seeds
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 tbsp coconut nectar
  • 2 tsp cinnamon
  • 1/2 tsp vanilla 
  • dash of salt
Pre-heat the oven to 375ºF. 

Pour oats into a bowl. Add the almonds to a food processor, and pulse till you have large crumbs. Add the almonds, coconut shavings, and seeds to the oat bowl and mix. 

Pour the maple syrup, coconut oil, and coconut nectar into a pot, and place on the stove at medium heat. Add in the spices, and stir till all is melted and well mixed. 

Pour the sauce onto the dry ingredients, and mix well. 

Coat a large baking pan with coconut oil, and pour the mixture into the pan. Spread it evening, and bake for about 20-25 min, stirring half way. Keep an eye on it to make sure it doesn't burn. Your house will start to smell so amazing!

Once done and the granola is a light golden brown, take it out of the oven and allow to cool. Store in a glass jar, and enjoy!
